Wilted lettuce

leaf lettuce (about 4 cups torn up)

4 slices bacon, diced

1/4 cup vinegar

1/2 cup water

1/3 cup onion, chopped

1/4 tsp salt

1/8 tsp pepper

2 Tbl sugar


Just before serving, tear up fresh lettuce in large bowl

In large skillet, fry bacon and onion until bacon is crisp. Add vinegar, sugar, and water. Heat to boiling. Remove skillet from heat and pour hot liquid over lettuce. Season with salt, pepper. Toss 1 to 2 minutes until lettuce is wilted.

Serves 4-6

(adjust sugar vinegar and water to desired sweetness)
