Week 6 Recipe Ideas

Gourmet Southern Greens  

Greens are a staple in the south, but use this simple recipe for all hearty CSA greens such as: Collard Greens, Mustard Greens, Kale & Swiss Chard.  

1 lbs of farm fresh greens
1 onion
1 tbsp bacon grease
1 tbsp hot sauce
2 c chicken broth
1 tbsp apple cider vinegar
3 pieces bacon
2 cloves of fresh garlic  

Directions: Wash Greens multiple times in cold water to ensure all the dirt is off. I recommend washing and soaking the heartier greens in the sink for 15 minutes with 2 tbsp Vinegar and 1 tbsp Salt. This helps kill any unwanted grubs and insects. Rinse well, chop, and spin out in a salad spinner until dry.   Prepare other vegetables by mincing garlic cloves, dice an onion, and slice the bacon. Add onions, garlic, bacon, and bacon grease to a large stock pot and cook for 5 min. on medium heat until tender. Add remaining ingredients and simmer 10 min until greens are soft.  


Gourmet Grilled Cheese  

1 tbsp pesto
2 slices of mozzarella cheese
2 slices of tomatoes
2 slices of sour dough bread
3 slices of bacon
1 tbsp olive oil or bacon grease  

Directions: Spread pesto on the bread of your choice: sour dough or a gluten-free alternative. Prepare bacon and reserve grease on the griddle. Layer bacon, tomatoes, and cheese on top of the pesto bread, grill 2-3 minutes on each side until golden brown. This is a delicious grown up grilled cheese sandwich, even kids will love!!  


Kale and Cabbage Egg Rolls  

2 c napa cabbage
2 c kale
1 tbsp fresh ginger
1 tbsp fresh garlic
1 tsp 5 spice
1 tbsp sesame oil
1 tbsp Bragg's Liquid Amino
1 pkg egg roll wrappers water (for the wraps)
1 c spring onions coconut or peanut oil  

Directions: Sauté all vegetables for 2-3 minutes until tender. Remove from heat and add seasonings. Line up egg roll wrappers and gently rub water on the edges and place 2-3 tbsp of the sautéed veggie mixture in the center of the wrap, being careful not to overfill it. Fold 2 opposite ends together and press down the ends with you finger so the filling is secured inside. The egg roll should look similar to an envelope. Fry for 2-3 minutes until golden brown.
