Week 15 Chef Notes

As a chef, I enjoy eating everything in season, and I love purchasing extra farm fresh produce for winter months.  

Stocking up can be easy with 3 simple steps: Blanch, shock, and freeze.
Blanching an item:  Place an item in simmering water for 30 seconds.
Shocking an item: Plunge simmered item into and ice water bath.
Freezing an item: Line on a sheet pan, freeze, remove from pan, and place in an air tight container.

Some great items to freeze are: tomatoes, corn, broccoli, cauliflower, berries, butternut squash, sweet potatoes, onions, garlic, peppers, eggplant, squash and items prepared in a casserole.

Tomatoes:  Are easy to freeze for a great tomato sauce, blanch, peel, chop, and freeze in an air tight freezer bag or container. 
White Potatoes: Great mashed with skins on, roasted, or boiled season with fresh herbs, olive oil, salt, and pepper. 
Butternut Squash: Puree and freeze for future winter use.  This is a great item for babies as well, freeze in an ice cube tray for easy single servings. 
Green Bell Pepper: Great item to stock up on and freeze for the winter  months. 
Corn:
Simmer, boiled, roasted, or grilled.  This is another great items to stock up on for winter months.  
Onion: Prepare a homemade seasoning blend to enjoy year round: onions, peppers, garlic ,and fresh herbs.  Great on chicken, steaks, and pork chops.
Basil: Prepare a homemade tomato sauce with onions, tomatoes, garlic, and basil. 
Grapes: Roasted grapes and chicken breast is an amazing French classic.
Cantaloupe: Fresh with ricotta cheese, cottage cheese, or prosciutto.
