Week 10 Recipe Ideas

Greek Salad
1 heads of romaine
1 c tomatoes (variety)
1 red onion
½ c feta cheese
2 green peppers
1 cucumbers
1 c kalamata olives  

Directions: Prepare the salad and pair with the easy Italian dressing or Greek yogurt marinade.  

Greek Chicken Skewers with Grilled Vegetables
2 lbs chicken breast or thighs
2 c Greek yogurt marinade  

Directions: Marinate overnight and grill 7-10 min. each side until the internal temperature is 170 degrees or above.  

Grilled Vegetables
1 large sweet onion
2 zucchini
2 yellow squash
1 c Italian vinaigrette  

Directions: Marinate vegetables overnight, but no less than 2 hours. This infuses the vegetables with flavor while tenderizing the veggies for the grill. Grill for 2- 3 minutes each side. Serve with basmati rice and Greek chicken skewers.  

Easy Italian Dressing
1 c olive oil
¼ c lemon juice
2 tbsp cider vinegar or balsamic
1 tsp Italian seasoning
2 tbsp Bragg's amino
1 tsp whole grain mustard
½ tsp granulated garlic
¼ tsp cracked black pepper
1 tsp honey  

Directions: Puree all ingredients to emulsify.  

Simple Greek Yogurt Marinade
1 c olive oil
½ c Greek yogurt
¼ c lemon juice
1 tbsp dijon mustard
1 tbsp Italian seasoning
2 garlic cloves
1 tbsp honey  

Directions: Puree to emulsify. This dressing is great for any salad.
